How can I remove items from an artist gear list?

I think that regular users can't do that. But in some cases you can review the submissions and point if they are incorrect.

Yes. I just setup an account, added some gear. Wnated to change the photo - can't do it. Tried to delete and re-add it. Can't even delete?

Update: never mind I found out how to remove the item. I didn't see the TINY LITTLE X button next to the item on my board that removes it.

Yep, there is a little x inside of a circle at the bottom of any of your items if you're browsing your profile on a computer. Or you can go to the item that you have and hit the Saved status to change that.
