Yanni used a Yamaha DX7 in his albums and concerts up until 1997. You can see it used in the first part of this video. He used it for many of his famous sounds such as his Guitar (Keys to Imagination) and Harmonica (Reflections of Passion) pacthes. It was also used as the "Crash" sound that is heard in 'Santorini'.

Yanni used the Korg M1 in many songs. The one recorded example I could find was from the main chorus from 'Within Attraction'. You can see it on the top of the left-side tier.

Yanni has used this keyboard for the piano voice in a number of his live concerts including the "Live at the Forum (Mundo Imperial) in Acapulco Mexico" (2009) and the "Live at El Morro, Puerto Rico" (2011).

Yanni used a Roland D-70 for a brief period of time in his 1995 world Tour. It can be seen at at Royal Albert Hall where he performed the same year.

Yanni used the E-Mu Emulator III for a short period of time from about 1989 to 1994. It can be seen in the Live at the Acropolis video being used as the main sound for 'Santorini'. It is the large grey console on the top-left tier (Yanni's top-right).

Yanni used this keyboard in his 1993 live concert at the Herodes Atticus Theatre in Athens, Greece. The concert was later published as the live album and concert film "Live at the Acropolis". The piano sound of the keyboard can be heard when Yanni is playing his famous song "Satorini".

Yanni used the E-Mu Emulator II up until 1991 when it was replaced by the Emulator III. You can see it in this video at timecode 15:20.

Yanni used the DX7-IIFD for a very short period of time from 1994-1996. In my opinion, it was a mistake getting rid of it as it made some of his most famous sounds more clear and beautiful. You can see it in the video in the song 'Desire' being used for the main guitar sound.

Yanni used the Prophet VS for quite a while leading up to 1994. You can see it in this performance of 'Swept Away' at timecode 6:53.

Yanni only used the O1/W-FD for a short amount of time in his concerts, but even in his recent albums, you can hear some sounds that come from the O1/W-FD. You can see it in the organ solo of this concert performance of 'Nice to Meet You' at timecode 4:28.

During his time as keyboardist and producer for the Minneapolis-based art-rock band Chameleon in the mid-1980s, Yanni's massive keyboard rig featured an ARP Quadra.

In the YouTube video titled "Yanni - 'Playtime'_1080p From the Master! 'Yanni Live! The Concert Event,'" at the 2:13 mark, Yanni is visibly using a Tech 21 MIDI Mouse as a program changer for his keyboard station. The device can be identified as the small black controller positioned on top of his TRITON keyboard. This performance is captured in the official video uploaded by Yanni.
