Kevin Moore used a Korg DW-8000 synthesizer during the "Images and Words" era. The Artist Shop chat log with Gary Davis notes this, and a promotional photo for Dream Theater's first album shows Moore with the instrument.

Kevin Moore is using a Roland D-70 (in the video at 3:36) during the recording sessions of Images and Words.

Kevin Moore can be seen using a Korg DSS-1 in the promo video clip of Take The Time as well as the "Images and Words: Live in Tokyo" DVD.

I use Ableton Live for writing, and even for recording – I recorded my vocals in Live, too.

As far as real keyboards, my only real-world keyboard is a Moog Voyager, which I overused on this album because it’s so much fun.
