In a reply to @connorthomasmusic, Ben lists the specifications of Jacob's Mac Pro: "It’s a Xeon W 3275M w/ 56 threads. Ours is 384G RAM. We have 10G network storage for the sessions." The processor, therefore, is the top spec, with the the fourth largest option for RAM.
In the description of Collier's cover of Close to You by The Carpenters, he says that two of these microphones were used to record the song. During the recording for In My Room, these were used as the main instrument microphones. They could be seen as drum overheads, guitar, and percussion microphones in various YouTube videos before 2017. Since 2017, when Ben Bloomberg outfitted his room with a bunch of recording equipment, these have wandered around the room a ton. They could be seen above the piano, as a vocal mic by the piano, but most recently (as of 2020), his pair (or possibly two pairs) of 414s are used on snare.
Jacob Collier frequently uses the Nord Stage 2 88-Key Stage Keyboard in his YouTube videos and live performances, as evidenced by a user-uploaded photo on Audioxpress.
This microphone can be seen in the upper right hand corner by Jacob's head, throughout the live stream. He's used it since before In My Room, and transitioned to using his modified U87Ai when he got that in early 2018. The microphone has since been seen as his vocal microphone at the piano. After the power supply got fried, he switched to the Neumann for one performance and the AEA ribbon ever since.

Jacob Collier is a Murat Diril Cymbals endorser. He used cheap Stagg cymbals in his earlier videos like "Road Not Taken (2012, https://youtu.be/0BE52oSiYKo)," but he changed to the professional grade Murat Diril Cymbals later in his videos like "Close To You (2014, https://youtu.be/9s1baxrxGHU)."
In this stream he uses REAPER to make sure he is audible throughout the stream, although Logic is his main DAW.

In the photo linked above, you can see the Taylor GS Mini-e. While the models currently being produced & sold have different electronics, Jacob's guitar seems to have the ES-B pickup & preamp. This can be explained by taking a look at the wood used for the body: layered walnut. Taylor used to make the GS Mini-e with a layered walnut body and the ES-B electronics, which is the version that Jacob owns.
As seen in the piano shots, propped up against the wall to the left of the upright bass. Distinguished by the red and white faders, this is clearly the YC61. It's seemingly not been used for any musical projects yet, but was likely intended as a stage piano for the post-Covid Djesse tour.
Jacob can be seen using this bass in multiple music videos, including 'Saviour', 'Close To You' & 'Fascinating Rhythm'.
At 3:24 in this video, the ROKIT 8 label on Collier's studio monitors comes into focus. These monitors were used during the production of Collier's debut album, In My Room.
