These were his secondary studio monitors before he switched to Avantones. As seen in an instagram livestream linked above, around 14:33.
In a user-uploaded photo on Miaopai, Jacob Collier is seen using the M-Audio Axiom 61 2nd Gen 61-Key USB MIDI Keyboard Controller during a live performance, showcasing its role in his setup.
In the description of Collier's cover of Close to You by The Carpenters, he says that one of these microphones was used to record the song.
He uses this instrument throughout the song Hideaway.
He used the "Notre Dame" patch in the song "Moon River" because he collected the Moon intros videos on the same day than the Notre Dame fire happend. Visible around 7:44 in the video linked above.
As seen on the ultimate image of Jacob gear above. He's used this monitor since late 2017, when Ben Bloomberg helped fill the room with new gear. It's a 4k monitor so that he can see as many tracks as possible at once, and it's 32" so everything isn't tiny at native resolution. It's branded Acer as seen on the picture, and from the bezels and the location of the USB-A ports on the right side, you can make out that it's the BM320.

The RE20 can be seen micing up the amplifier in the background throughout the video. Seen most clearly at 53:28.
During this performance the left Jacob is seen playing a vintage piano. Judging by the position of the knobs and the front metal plate (which is smaller compared to Fender Rhodes) I can assume this is a Wurlitzer 200A.

Two Avedis Audio MA5 microphone preamps can be seen at the very top of his rack. One of these is used for his main vocal microphone, with 28k shelf engaged, as discussed in the Twinkle, Twinkle, Little Star livestream. If you download the Logic Session from his website or get a particularly good screenshot from a livestream of his, you can see that his 21st Audio Input, entitled "Sing", is his vocal mic. On his Interface, that is the first channel of DANTE inputs, when in 96khz or 192khz. This suggests he uses one of the Grace m108 units at the bottom of the rack for conversion on this channel, not the Focusrite itself.
Collier takes a solo on this melodica in his take on Georgia On My Mind.

Jacob Collier is seen playing the Marcodi Harpejji during his performance of "Hideaway" on October 23, 2019, at Paste Studio NYC, as featured in a video by Paste Magazine.
During his Livestream for "All I Need," he is seen using Omnisphere here at the 10:56 mark. He has also talked about using Omnisphere several times.
Starting around 22:05, the Heil PR 48 is shown on the Surdu.
In a Twitter post, Jacob Collier is seen using the Grace Design m905 for monitoring alongside other monitors. This device was added to his setup around 2017 when Ben Bloomberg upgraded his studio with new gear. The m905 also features a headphone output, which Jacob uses with his main recording headphones at his desk.
