In the YouTube video titled "Coodie & Chike Unveil Unreleased Kanye West Footage From 'College Dropout' Days (Exclusive)," which is provided by Billboard, Kanye West is visibly using the Roland VS-1680 Digital Studio Workstation while recording a verse from the song "All Falls Down."
"There is, of course, a method to the madness. It all starts with the Boss SP-303 Dr. Sample, which Madlib uses to capture and chop all his distinctive loops before layering them for mixing on a 16-track Roland VS-1680 digital workstation."
MF Doom is confirmed to have used the Roland VS-1680 Digital Studio Workstation, as evidenced by visual documentation. Specifically, Doom can be seen holding this piece of studio recording gear in the cover image for "America's Most Blunted" and during a photoshoot at the Museum of Pop Culture in Seattle. This information is supported by photographic evidence available in the public domain.
From the interview:
"The most detailed demos I’ve made since the second Mayfield Four record. Second Skin was very detailed – that was back in the days of the Roland 1680 [16-channel multitrack recorder] and I basically had an Avalon 737 preamp and my Roland 1680. "
In a YouTube video titled "The gear I used to record Burning Earth album," Gus G. discusses the equipment he utilized for recording Firewind's album "Burning Earth." At the 0:10 mark, he specifically identifies the Roland VS-1680 Digital Studio Workstation as part of his setup.
"At home for making demos, especially for making electronic stuff, I actually use a Roland VS1680 sixteen-track hard drive studio. I have that at my house and I like that because it has a lot of plug-ins. You can plug guitars and instruments into each track which is really good and really different than a computer interface."
In Tape Op interview with Larry Crane, he mentions using Roland VS-1680 while recording Portastatic's "Summer of the Shark" album:
John Plymale is great with that. I mixed Be Still Please, the last Portastatic record, with John as well as Summer of the Shark. John's a master of the EQ in terms of what you're saying. Instead of just panning something to a different place or turning it up or turning it down — just EQ'ing something so that it sits in the right place and you hear it. When I brought in Summer of the Shark and we had to dub all that stuff out of my Roland VS-1680 two tracks at a time, it just took for fucking ever. Those tracks had been recorded onto reel-to-reel 8-track, then dumped into the 16- track. There was a guitar solo that was on a track with some other guitar but the guitar solo was slightly out of tune and there was no way to separate it out — but he EQ'd it so that it didn't sound as out of tune.
Nate Smith confirmed his use of the Roland VS-1680 Digital Studio Workstation in his home recording setup, as mentioned in an interview with Tape Op Magazine. Smith stated, "During that time is when I got into home recording. I had a [Roland] VS-1680 setup at the house."

Used to record "Luv(sic)", as recalled by Shing02 in the booklet that accompanies the physical release of Luv(sic) Hexalogy (released December 9, 2015) and in this ニートtokyo interview (released on December 28, 2019) at 3:34.
Luv(sic) Hexalogy booklet (2015) (Japanese | English)
Luv(sic) はエル・セリートの自宅で Roland の VS-1640 [sic] と今も愛用している Octava のマイクを使って 録音した。
I remember recording the vocals to Luv(sic) on a Roland VS-1640 [sic] and an Octava mic (which I still use) at my home studio in El Cerrito.
ニートtokyo, "Shing02 : Encounter with "Nujabes", Luv(sic) production background" (December 28, 2019), English captions by Sean Schiffy Nakamura
[A]nd at the time I lived in a small city called El Cerrito in north Berkeley and I still remember recording on Roland's [gestures the width of the VS] VS hard disc recorder at my studio at the house[...] and had my best friend Top Bill do the scratches for it[,] then sent those files to Japan[.]
Roland never released a VS-1640, but this can be understood as Shing02 combining the names of two VS models available at the time "Luv(sic)" was recorded, the VS-840 and the VS-1640. Both models were released in 1998, antedating the recording of "Luv(sic)" in late 2000 (per the Luv(sic) Hexalogy booklet (Japanese | English) and "Behind The Scenes of Luv(sic) Part 6 Remix Video Shoot - Part 1" at 2:13), but the VS-840EX followed in 1999, while the VS-840GX followed in 2000. Fortunately, Shing02's demonstrated width and the mention of digital files are indicative of the VS-1680.
Visible in two photos of Moe Z MD in his studio (here and here), which was taken for this interview from the Summer 2003 issue (Issue 6) of Yamaha's All Access.
